I think all members here know how to write emails.
Everyone has to have one and use it in order to sign up for this board.

Maybe you're asking perhaps how it is done at the low level like how it's sent from the email server's view?

Perhaps you're talking about headers, encoding?

Do you want to set up an email server?

I know how to right emails to online personal ads to charm lovely women into going on dates.  8;)

And I know how to write the ocassion rediculous email to make a friend laugh, but that's about the extent of it.

I think the email server that routes the email puts the time and date stamp on it, so to do it, you'd have to be the system administrator for that server.
Nuke the arabs till they glow, then shoot them in the dark.

If you had an email server and the email message was created on it, you can set it to whatever time and date you want.  However, once it gets routed over the internet it will be time stamped with the date of all the hosts that forward it until it arrives at the destination.
