So it's bovine gelatin....that I can mix with dairy.

I am sorry, I am just finding this out today and am in disbelief.

Apparently it looses it's meat status. But it had to be from a kosher permitted source in the first place. Therefore if it's from a pig or horse or even a neveilah cow (Not shechted according to Halacha.), it was never permitted in the first place so it can't be used at all.

But how can I know! So many products use gelatin. So how do I know which is which.

Buy the ones that say kosher (OU, OK, Star-K, etc...). Just not the ones with a plain K. I mean there is Jello (The actual Jello brand. I use Jello to refer to the generic product even though it's a brand name.) that says K and in the ingredients it says "Kosher Gelatin". You see the same on some yogurt also. I wouldn't buy those yogurts.
