I have never eaten duck with tomato sauce. I like it with apples, raisins and fresh roasted bread stuffed. For the sauce I take the gravy.

You don't have to put the fat to the garbage.

You can combine the fat with roasted onions and some small apple-cubes. Add some salt and pepper and a bay leave. Now you have to put it in a ceramic pot and to cool it down.

After it is hard you can eat it on bread. :)
