I had it once in a soup and once as a burger. It was real good in the soup. In the burger it just tasted like and ordinary hamburger.
Does it bother you that you have to face the dome and the rock to say the sh'ma?

I love Bison.  But I don't have it much anymore because the local Kosher butcher no longer carries it.

Purely hypothetically. Imagine that the genetic scientists of the future create a new breed of mutant pigs that chew cud. Would these pigs become kosher?
I'm not a Posek, but I'm almost positive that would be treif, because it would still, originally, have to come from a Pig.  And if an animal that has, by accident, the additional qualities it needs to make it Kosher, it is still treif.
