Gentiles are obligated to fulfill the Seven Noahide Commandments because they are the eternal command of God, transmitted through Moses our teacher in the Torah. The main and best book on details of Noahide observance is "The Divine Code" by Rabbi Moshe Weiner.

Although they teach that their following
of Jesus ‘supersedes’ the obligatory necessity
of keeping Shabbat, this is obviously not
true but I think Paul (Saul) was initially
   “instrumental” in discouraging many from
following Torah laws and rules such as
keeping Kosher, the Sabbath, etc. Either
way, a well done commentary by Rav Tovia.
