Gentiles are obligated to fulfill the Seven Noahide Commandments because they are the eternal command of God, transmitted through Moses our teacher in the Torah. The main and best book on details of Noahide observance is "The Divine Code" by Rabbi Moshe Weiner.

Because it is patriarchal, certain aspects of Talmud for
example, imight by some be “interpreted” as, in certain
respects to be somewhat ‘chauvenistic’ as well as equally
‘progressive’ due to some of the things that are within it.
A Jewish person, however, as a ‘rule,’ follows the traditions
of their father while they are nevertheless Jewish through
their maternal lineage. Rav Tovia, with his extensive knowledge,
brings a great deal of clarity and wisdom to the aforementioned
  topic.
