Tradition is at least two, and then some people add one for each child. Anyone have any other interesting customs or is anyone aware of where these customs originated?

Lighting for each child originated (and practiced) by the Askenazim.

Is there a source for the reason of the Sephardi (or Ashkenazi) custom?

My Iraqi grandmother lights three every Shabbat, Yom Tov, and Rosh Chodesh.
That's interesting, Do you know why she lights 3?
