The FBI warned of concerns over a biosecurity risk from Chinese scientists' research after they intercepted virus samples illicitly carried in luggage a year before the coronavirus outbreak.

that sounds like the most likely story.
I've read mostly crazy stories that were obviously poorly manufactured.

Sometimes,  I'm thinking some of the ridiculous stories were thrown out there to get people to believe that the bio lab origin is cooked up by kooks.  This way, it dis-credits any future stories of bio lab origin.  So, next time someone says bio lab, you hear it and you dismiss it without considering it.
