Title: If internet related services go down on Sat....

Observant Jews shut down their various businesses on Saturday except hospitals and other emergency services.
What about tech companies? A hosting company that hosts all kinds of services can host anywhere from kiddie web sites to services for hospitals.
What happens when services go down on Saturday? That's an emergency if a hospital depends on this service, right?  I guess they would have to go to work and not let people die.  Or perhaps they keep non-Jews on call on Saturdays?

Anything that is essential keeps operating in shabbat mode. Hospitals keep operating on shabbat so if IT support is crucial  they are probably working in some capacity.
