You'll be happy to know that on Thursday Night, I made my Passover duck in the oven for the first seder cooked in tomato sauce. But the sauce got mixed with orange duck fat so it's a combination of orange fat and red sauce and it tastes really good like when I make a beef brisket in tomato sauce. I guess you don't like the fat part and I also ate the skin. For the second night we had a chicken. The birds were to represent The Chagigah and I also ate lamb both nights to represent Korban Pesach since Sfaradim are allowed to eat lamb at the seder.
