It originated in Naples during the war, it was considered peasant food for the soldiers as a quick bite cause all it was was bread, sauce and cheese.  Eventually it grew to what it is now.  By the way Pizza Hut and all those chain places are junk.

It is different there in the structure then here,  we are familiar with the folding slice in America.  In Italy they didn't have it like this and still don't.  The Italians in the US added there own idea to it where you get a big pie and 8 slices to them.  In Italy the pie itself is smaller  for an individual and people get different kinds to their likings.  But its not just pizza.  My heritage cornered everything from the start of the meal to the end of the meal including the coffee and dessert.   And when it comes to this atmosphere, it also brings the whole family to the table.  Now a days, everyone eats at different hours in a family.

When I was growing up we had our dinner together, we said grace before and after the meal the thank you for giving us this food Lord and when we were done thank you for such a meal.  Most of New Yorkers you go down to Little Italy you know what I am talking about.  YUMMMMMMMMMMMM

The best pizza in America (and perhaps the world) is in NYC.

Man, I wish I were in New York.

WAAAAAAAAAAAAAAAAAAAAAAHHHHHHHHHHHHHHHHHHHH!

Wolf, what part of Italy is your family from?  My Italian half is from Naples and Venice.  Talk about different cooking styles!  I like the rizzoto from the North and the red sauces from the South.

MasterWolf1, you are so right about the Italian food sold in places like Pizza Hut and Domino's etcetera, not being even close to the authentic food in Italy. Half my family is Italian (from the Molise region) and my Nona (Italian grandmother who passed away :'() used to make the most incredible lasagna (sister does now ;D) and everyone loved it!

Wish everyone could try it at least once.

Best regards,
apacallyps

Once I went to a kosher Italian meat restaurant on The Upper East Side of Manhattan. IT was good but the main dishes cost over $20.00 each.

Geez only $20 dollars that is so cheap.

The secret to a good pizza is in the base. It's easy to get good quallity toppings but 90% of pizzerias don't know squat about making a good base.

Its all in the dough.

In America, pizza is no good west of the Colorado River.  The water's too alkaline.

Because real pizza does not have the western crap all over it.

Add to that, bagels and Chinese food. Actually there is no good pizza, Chinese food or bagels outside of New York, and forget about knishes, they've never heard of them. I know, I've been everywhere in America.  :)

i worked for a pizzeria. there were two brothers. the second one used to push all personel out of the kitchen and lock the door while he was preparing the base/I don't know how to call it.

Turkey must get out of NATO. NATO must get out of Kosovo-Serbia. Croats must get out of Crajina. All muslims must get out of Christian and Jewish land. Turks must get out of Cyprus. Turks must get out of "Istanbul". "Palestinians" must get out of Israel. Israel must become independent from USA.

Concerning lasagnas,
we lived nine years surrounded by Italian neighboors.
My mother learned to make lasagnas, and, guess what ?
One of the Italians (who was then something like 50 years old)
claimed my mother makes better pizzas
than his own mother, there, in Southern Italy.

Scriabin you hit the nail on the head its all in the dough. Here in New York we have great water thats why the bread and pizza are so good. Years ago we had many of the major beer companies right here in the five Boroughs because of the city's great water supply. As far as pizza the sauce is important but with trial and error a good pizza man will be able to find the right brand of sauce and seasoning to make it taste good. Its also important to have the right pizza oven. Most of the chains use a convection style oven that cooks the pizza to fast on a conveyor belt and they end up with a spongy pizza. The correct pizza oven is like a old time brick oven it cooks the pizza at the right speed and the heat is concentrated from the bottom up.
