if someone is born to a gentile woman, and only AFTER he is born, the mom convert to judaism, does the child get halachaic status as a jew?

Definitely NO. One is Jewish only if one's mother was a Jewess at the time one was born, or if one voluntarily does an Orthodox Conversion.
