That's great. You should remain observant of the Noahide Code. The mass conversion of the Israelites took place in a specific historical context: "I am the Lord, your God, Who took you out of the land of Egypt, out of the house of bondage" (Exodus 20:2). Instead of being slaves in Egypt, God made them His slaves with significantly more restrictions than Gentiles. Those restrictions were never meant for the whole world.

I would say that if you desire it, you should join the Jewish people, ala Ruth. Glad to see you keeping the Noahide Commandments!
