Alcohol

Is drinking it a sin or is it how much people drink of it that's the sin?

No, it isn't a sin .

It even says in the Talmud "when wine goes in...the secrets come out" i.e. we see what you're really made of. 

This can be a very good thing if you're in the right environment.

The Luvitcher Rebbe however, says one shouldn't go over 4 shots of liquor.

"It is not upon you to finish the work, nor are you free to desist from it." Rabbi Tarfon, Pirkei Avot.

What type of environment are you referencing?

In chassidic circles we have what's called a "farbrengen". You get together with friends or a Rabbi and you throw a few back, and sing some very inspiring hasidic melodies and talk about being a better person a better Jew etc.
people open up a bit and make good resolutions for the future....

The  farbrengens when I was in yeshiva were the absolute highlights of those years.

The main farbrengens were those with the Rebbe.

It's something you can't really descibe until you've been there. But it's wonderful.  That's using alchohol properly in the right envirnment there.
